Detroit, powerful forces are coming together and conspiring for your benefit!
Please visit us at the Lab and join them! We're serious! Every time we turn around here, people are making vital connections with one another and realizing that change is possible. We're honored to see this happening on a daily basis and to share the observations with you all through Evolve Detroit! So, without hesitation, let's relax into it. Give yourself a well deserved break, fill your favorite mug or glass with something tasty, breathe completely, relax into your chair, smile gently, and drink deep from the possibilities we've put together for you this week. Gratitude
We've had a ton of subscriptions to Evolve Detroit! this week, so first and foremost, if you're just joining us THANK YOU! We can't express how much every chance to share our talents and knowledge means to us. Due to this, one constant Evolve Detroit! "feature" is our expression of gratitude. This week, yoga gained more momentum and we want to thank all of our brand new yogis and our "striving towards beginner's mind" veterans! A heaping helping of appreciation to everyone who enjoyed last week's lunch offerings and an even greater amount to those who we were unable to squeeze in. (Though it is a blessing, it's also heartbreaking to turn people away when we've sold out!) A special note of thanks to those of you who are always talking us up to co-workers. We don't have an advertising budget and hate using paper, so your efforts are what keep us going! Strong, yet quiet and contemplative, appreciation goes out to the brilliant souls who joined us for Tuesday's Reiki I class as well. May your work with Reiki enhance your and other's lives! We've got to include a shout-out to Melanie and Terry for assisting us with lunch too. And finally, thanks to all of you for giving us inspiration, purpose and the drive to keep going! We are blessed to know each and every one of you!

We also want to congratulate our friend and yoga student Susan on her graduation from Cooley Law School!

Highlights This Week
Did you think Angela would tone it down after the Nachos and Soul Food last week? No way! She's actually picked it up a notch with the return of Healthy Detroit's new favorite, the B.L.A.T. Sammich! Or maybe your working to get your Raw Food percentage up so you can join the Raw Food Singles Network? No worries there, just pick up a few orders of our Raw Pad Thai so you can meet your raw dreamboat! :) Of course, we inspire you all to join us for yoga this week. Our practice is coming along and the energy is always just right here! We also have space in Sunday's Vegan Brunch, which is our favorite class. Looking ahead, please consider joining us for our Valentine's Day offerings that are listed below. (The massage class is going to be cool!) Oh yes, the February Lululemon Yoga Loft Party is on the 2nd and though we are not doing the food this time (hint, hint) we plan to be in attendance.

COMMUNITY:
The Garden Resource Program's 9 week Urban Roots course begins in February. Though it is late, we checked with Lindsay at The Greening of Detroit and she said it is still possible to join the program if you get your application in asap! We would love to go ourselves but due to yoga and our vegan and raw food classes we are unable. Though it is late, if anyone is interested in taking this course we would be happy to sponsor you if you are willing to take the lead on the Lab's community garden that will manifest this spring! :) Please call us if you're interested in helping us out with this project!

Open to all Reiki I practitioners from any school, our Reiki classes focus on practical application of this healing art. The fee of $200 includes this hands on class and a one on one practical to be completed within a month. For more info or to register call Gregg.

REIKI AT THE LAB:
Evolutionary Symbols - Reiki II Certification, Tuesday, Feb 26th from 7 -10 PM.
Reiki II focuses upon Symbols and their various uses in all aspects of life. We attune the attendees to Reiki II and practice self care and client techniques. The class will be an hour of lecture and two hours of hands-on group work. A frame-worthy Reiki II certificate will be presented after completion of a one hour practical with Gregg to be scheduled on your own.
The cost for certification, that includes the group class and your practical with Gregg, is $200. To register for this special offering please call and speak with Gregg at 313.316.1411. If you would like to experience Reiki, individual therapeutic sessions are also available! We'll offer Reiki I again in March!

FEBRUARY VEGAN AND RAW FOOD CLASSES:
Angela's classes are about much more than just food preparation - meet like minded people, share great food, information and resources! We will prepare a four-course meal from start to finish, and then sit down together to enjoy the fruits of our labor! Unless otherwise noted the cost is $50 per class. Vegan Brunch - Feb 3rd, 11 - 3 pm- 4 seats left, register today!
Brunch, that magical blend of breakfast and lunch, is one of our favorite times to conduct “experiments.” Our research in this otherwise extremely limited territory for vegans has provided encouraging findings that we just have to share! Angela will present incredible egg and dairy substitutes, mock meats for breakfast and lunch, the divine secrets of the sweet side of brunch, and preparation tips that will forever change your vegan kitchen experience. And the best part - when we’re finished in the kitchen, we’ll sit down together to enjoy the wonderful brunch we prepared!

Vegan Valentine's Class - Feb 9th, 3 - 7 pm - Just Added!
Food can be healthy, delicious, sensual, nourishing, and healing. Preparing a meal for or with someone you love is a very special connective experience. High quality, organic food connects you with your Soul, your Partner, the Earth, and the Universe. This class is perfect if you want to surprise that special valentine in your life with a romantic and delicious vegan dinner, or come as a couple so you can re-create this beautiful meal together in the comfort of your home. Angela will take you step-by-step through the preparation of a full dinner menu, from a sensuous appetizer to a sinful dessert, with decadence in between!

Intro to Raw Foods - Feb 23rd, - 4 seats left, register today!
In this class we will be covering all of the basics needed to create amazing raw dishes for your family and friends! Angela will show you how easy “un-cooking” can be by taking you step by step through the preparation of a full menu, touching upon topics like soaking/sprouting, dehydrating, and mock cheezes, after which we will sit down together to enjoy the incredible meal just made and wonderful conversation!

DETROIT EVOLUTION KOMBUCHA:
We're very pleased to be offering our Kombucha Tea in bulk for .12 an ounce! Our Kombucha SCOBY's (Symbiotic Colony of Bacteria and Yeast) are lovingly cared for and render a highly potent tea. If you would like to try our kombucha please bring a clean glass container and we'll fill it for you. Our kombucha is much more potent than the mass produced and bottled kombucha available at local stores so less is required.

Our food is lovingly hand-crafted daily using organic and/or local ingredients! Quantities are limited to keep everything FRESH! We sell out everyday so calling as early as possible (even a day before) is encouraged. Pick-up and Delivery are available between the hours of 11 a.m. and 2 p.m. Limited Downtown and Midtown delivery is available for $2!

Raw Offering: Pad Thai $10
Pad Thai literally means Thai style stir fry. To achieve that feel, we marinate julienned Carrot and Red Pepper, shredded Purple Cabbage and Kale, Bean Sprouts, Cherry Tomatoes, and Green Onion in our delicious Pad Thai Sauce and serve it over Zucchini and Daikon Angel Hair Noodles with a sprinkling of crushed Teriaki Almonds.

Vegan Offering: B.L.A.T. "Sammiches" with Sweet Potato Fries $9
It's Back! Sundays are the closest thing that we get to a day off here so Angela gets rather fancy and whips some serious gourmet fare. One of our favorite things to make are our super-decked out B.L.A.T. "sammiches" (as we affectionately refer to them) using Avalon Farm Bread, topped with crispy Tempeh Bacon, Romaine Lettuce, Avocado, Tomato slices sprinkled with sea salt and black pepper, and then smeared with Garlic-Chili Vegan Mayo. These crazy-good "sammies" are served with a heap of Sweet Potato Fries seasoned with Cinnamon, Nutmeg, Chili Powder and Paprika, and Maple-Mustard Sauce for dipping!

Angela's Raw Energy Nuggets $3
Almonds, Pecans, Walnuts, Raisins, Agave Nectar and Safflower Oil blended together to satisfy a sweet-tooth craving or as a mid-day "pick-me-up" snack.

The Everybody is a Star Salad $7
We start with a bed of crisp mixed greens, and you choose what fresh local and/or organic toppings you want to add! You also have your choice of homemade dressings to heighten your salad experience.

Toppings:
(5 are included, additional toppings are .50 each): Tomatoes, Cucumbers, Carrots, yellow, green or red Onions, Avocado, Peppers, Walnuts, Sliced Almonds, Pecans, Raisins, Cranberries, and Micro Greens.

Dressings:
(All of our dressings are vegan, sugar free, wheat free and made with sunflower oil. We use sunflower oil so that the true flavor of the dressings can shine through.) Angela’s Signature Lioness*, Lemon-Garlic Vinaigrette, Balsamic Vinaigrette, Sesame-Ginger Vinaigrette and our Green Detroit Ranch.

*Lioness Dressing is: Sunflower oil, garlic, stone-ground mustard, lemon juice, sugar-free/wheat-free Worcestershire sauce, sea salt and black pepper.
